This is a refreshing and delicious pasta dish, one to definitely try if you are a lover of olives or just love pasta and want to try something new.

1 Tbsp. Oil
½ Onion, peeled and finely chopped
1 Clove Garlic, peeled and crushed
1 Tsp Dried Oregano
Pinch Chilli Flakes
390g Chopped Tomatoes in Juice
Handful of stoned black olives, chopped and sliced
200g Dried Penne Pasta
A handful of basil leaves
Cook the penne in a saucepan and leave on the side.
Heat the oil in a large pan and gently fry the onion for 5 minutes. Add the garlic, oregano and chilli and cook for another minute.
Stir in the tomatoes and the olives and bring the saucepan to the boil. Then add the pasta and let it simmer for 5 minutes
When about to serve add the basil and serve the pasta with a sprinkle of parmesan.
