Everyone loves pasta and the perfect thing to accompany it is pesto! Where most people just buy it in jars, the way to get the best possible flavour you can out of pesto is making it yourself. This recipe will help to make great pesto, which is fresh and tasty and can accompany may dishes as wel as pasta.
185ml Olive Oil
250g Pine Nuts
2 Handfuls of Basil
150g Parmesan Cheese
- Pour 4 tablespoons of olive oil in a frying pan and put on a medium heat. Once it starts to heat up add the pine nuts and fry them gently for 2 minutes, stirring constatly.
- Then roughly chop up the basil, including the stalks. Place them in a bowl adding the parmesan, juice of the lemon and the rest of the olive oil.
- Once this is done, pour in the pine nuts and the oil they were cooked in. Then grind down the mixture to a paste.
- Then serve!
